How To Clean Barbeque Trolley

Ensure that the barbeque trolley is to be cleaned and maintained after each use and always pay strict adherence to the guidelines of safety practices. The stewarding staff should make sure to safely and hygienically clean the barbeque trolley to achieve consistent results every time. Routine care and maintenance are required to preserve the appearance and corrosion resistance of stainless steel.

The Executive Chef and Stewarding Manager should be responsible for ensuring that appropriate kitchen equipment cleaning and maintenance methods are followed by the stewarding staff. The hotel training and HRD department should develop and implement proper written Kitchen Stewarding SOP’s to ensure the same is implemented correctly throughout all the food preparation outlets.

What are the steps for cleaning and maintaining the Barbecue Trolley?

Note: This SOP is for reference or example only, always follow the instructions provided by the manufacturer for your and others’ safety, and also to avoid any injury while operating this equipment.

1. Cleaning the Cooking Grids:

  • Before initial use, and periodically thereafter, wash your Cooking Grids in mild soap and warm water solution.
  • Always use a washcloth or vegetable brush to clean your Cooking Grids.

2. Cleaning the Flame Tamer Rack:

  • You should periodically wash the Flame Tamer Rack in soap and warm water solution.
  • Use a vegetable brush to remove stubborn burnt-on cooking residue.
  • Dry the Flame Tamer Rack thoroughly before you reinstall them into the cooking bowl.

3. Cleaning the Grease Tray:

  • To reduce the chance of fire, the Grease Tray should be visually inspected before each grill use.
  •  Remove any grease and wash the Grease Tray with mild soap and warm water solution.

4. How to clean the inside of the grill lid?

  • Grease can build up on the inside of the Grill lid over time.
  • This grease can drip onto your deck or patio when the lid is opened.
  • Always visually inspect the inside of the Grill Lid.
  • Remove any grease and wash with mild soap and warm water solution.

5. How to perform the routine cleaning of the Barbeque Grill Interior?

  • Burning off excess food after every cookout will keep the grill ready for instant use.
  •  However, at least every 3 months the entire grill should be thoroughly cleaned to minimize your risk of a grease fire and keep the grill in top shape.
  •  Turn all Control Knobs to the full OFF position.
  •  Turn the LP gas tank valve to the full OFF position.
  •  Disconnect the regulator from the gas tank.
  •  Inspect the hose with regulator assembly for cracks, cuts, or any other damage, and replace as necessary.
  •  Report to the Engineering or Maintenance team in case any maintenance is required.
  •  Remove and clean the Flame Tamer Rack, Cooking Grids, Warming Rack, and Grill Burners.
  •  Cover each Gas Valve Orifice with aluminium foil.
  •  Brush the inside and bottom of the grill with a fibre pad or nylon brush and wash with mild soap and warm water solution.
  •  Rinse thoroughly and let dry.
  •  Remove aluminium foil from orifices and check each orifice for obstruction.
  •  Check each Spark Electrode, adjusting as needed.
  •  The space between the Spark Electrode Tip and Spark Receiver should be approximately 3/16″.
  •  Replace the Burners and adjust the Gas Collector Box.
  •  The edge of the collector box should be overlapping the Burner Port.
  •  Replace Flame Tamer Rack and Cooking Grids.
  •  Reconnect the gas source and observe the Burner flame for correct operation.

6. Other points to note while cleaning the B.B.Q/Barbeque Trolley:

  • Ensure that the gas is not flowing out by turning off the machine completely.
  •  Turn off the suite pilot before starting the maintenance procedure.
  •  Always discharge the gas regulator from the LPG Gas Canister.
  •  Open the cover and then take the upper and lower griddle.
  •  Spray the grease cleaner under 40 degrees Celcius temperature in around 10 minutes.
  •  Completely remove the charcoals and clean the leftover ashes.
  •  During the dismantling ensure that the tray strainer is still in place.
  •  Take the burners one by one and then spray them with grease cleaner.
  •  Take the tray strainer to be cleaned.
  •  Clean the cover with a soft Scotch Brite.
  •  Take off and clean all the buttons.
  •  Clean the body of the trolley.
  •  After around 10 minutes clean the grill, griddle, and burner with a metal brush.
  •  Re-install all the cleaned parts.
  •  Put some cooking oil on the burner, griddle, and grill.
