Standard Operating Procedure for Dish Washing Machine Maintenance Checklist

To ensure that dishwashing machines run efficiently in hotels, it is important to establish a Standard Operating Procedure (SOP) for their maintenance. The first step is to create a cleaning schedule that outlines the tasks that need to be performed daily, weekly, monthly, and quarterly.

Daily tasks may include wiping down the exterior of the machine, checking the detergent and rinse aid levels, and removing any debris from the filters. Weekly tasks may include cleaning the interior of the machine, checking the water temperature and pressure, and inspecting the spray arms for damage. Monthly tasks may include descaling the machine and checking the water hardness level. Quarterly tasks may include checking the electrical connections and inspecting the hoses for wear and tear.

It is important to train staff on the SOP and ensure that they understand the importance of following it. Regular inspections should be conducted to ensure that the SOP is being followed and to identify any issues that may need to be addressed. Dish Washing Machine Maintenance Checklist and Procedure:

Required Tools:

  • Plier.
  •  Screwdriver.
  •  Clamp meter.
  •  Tester.
  •  Air Blower.
  •  Crimping tool.
  •  Oil Cane.
  •  Brush.
  •  Greasing Gun.
  •  Spanner Set.
  •  Cleaning Cloths.

Consumable Parts:

  • PVC Tape.
  •  Carbon.
  •  Removing.
  •  Compound.
  •  Old Clothes.
  •  Oil & Grease.
  •  WD-40.

Maintenance Activity and Checklist:

  • MCB – Loose & burnt electrical connection and rating of MCB to be checked.
  •  Selector Switch – burnt terminal loose connections and defective s/s to be checked.
  •  Final indicator – Fused bulb to be checked.
  •  Contactors – burnt contacts and operation of the contactor.
  •  Over Load relay – setting and operation of Overload to be checked.
  •  Loose Electrical Connections – to be checked.
  •  Proper Thimbling – burnt connections and thimbles to check.
  •  Motor – Full load Amps, Bearings noisy, cooling Fans and its terminal plate to be checked.
  •  Pump – Mechanical seal, and the impeller to check.
  •  Steam Connection – Any steam leakage and joints to check.
  •  Water connection – Any water leakage from joints.
  •  Mechanical system – Oiling, greasing, gasket, loose nut bolts to be checked.
  •  Drainage – blocked drain system to check.
  •  Door Operation – Door hinges, and proper closing of the door to be checked.
  •  Cleaning – to be cleaned
  •  Balancing and foundation – Broken & loose foundations to be checked.
  •  Check the steam pressure is 25 PSI.
  •  Check washing Motor Full Load 3 Amp.
  •  Check Conveyor motor – 0.2 – 0.3 Amp.
  •  Check the MCB – 23 Amp.
  •  Check Control voltage – 24 V.
  •  Check the Pre-washing motor full load of 2.5 Amp.
